
BIANCO DI BELLONA

From the vinification of the Coda di Volpe vine comes the Bianco di Bellona, dedicated to the beautiful goddess of war of Roman mythology, as fierce in battle, as sweet and voluptuous in her rest. Legend says that she loved to celebrate her triumphs together with the troops, watering her libations with lots of wine. Bianco di Bellona is a versatile and soft wine, designed to marry savory and delicate dishes such as buffalo mozzarella or raw fish.

Grape variety: 100% Coda di Volpe.
Production area: Owned vineyards are situated in the hilly area of the localities: Carazita, Piesco and Pesano in Luogosano and the locality Brussineta in S. Angelo all’Esca. Altitude: 300-490 m s.l.m.
Type of soil: Clayey-sandy with abundant volcanic elements.
Vinification: The grapes harvested at the beginning of October are selected in the vineyard and in the cellar, where they are pressed whole. The must is cold clarified and then fermented at low temperatures. This is followed by a short period of aging on the fine lees and then in the bottle.
Organoleptic characteristics
Color: Crystalline, straw yellow, bright.
Bouquet: Fruity bouquet with notes of yellow peach, pineapple and banana as well as aromatic herbs.
Taste: Intense, deep and very persistent.
Food pairings: Very versatile wine, excellent on all dishes based on fish, sushi and tartare as well as white meat or vegetable dishes accompanied by light sauces. It is a pleasant discovery in combination with Buffalo Mozzarella and Burrata. Serve at a temperature of 10-12°C.
