Vinification
The grapes are harvested by hand at the proper ripeness in September and are pressed whole and softly. The juice of the cuvée is cold clarified and ferments at a low temperature. The wine is refermented and aged in bottle on its lees for a period of 36 months.
Tasting note
Colour: Intense tawny yellow color with golden reflections.
Taste: Great character, elegant and full with good freshness, fine and persistent perlage.
Food pairing
Pairs well with fish like salmon or tuna; and would be excellent with a seafood risotto or paella. Serve at a temperature of 6-8 ° C.
