VINO SPUMANTE

Cuvée obtained following the company’s tradition from a careful vinification  of  the native white grapes of the vineyards we own. The entire processing cycle takes place in the cellar under our continuous control.

Contiene solfiti, Contains Sulfites, Enthält Sulfite, Contient des sulfites, Bevat Sulfieten, Indeholder Sulfitter, Innehaller Sulfiter

Type: Sparkling classic method pas-dosé.

Grapes: Three native white grapes that form the basis of the wine.

Production area: Estate-owned vineyards. Hilly terrain between 350 and 450 m. a.s.l. 

Training system: Guyot

Density: 4000 vines/ha

Grape yield: 70 q.li/ha 

Type of soil: Clayey-calcareous with volcanic outcrops at medium depth (1-2 m)

Harvest: First and second ten days of September depending on the type of grape.

Vinification: Soft pressing of the whole bunch. cold clarification of the must and fermentation at controlled temperature in stainless steel tanks. This is followed by the second fermentation in the bottle.

Refinement and disgorgement: After 36 months of stay on the lees in the bottle.

Organoleptic characteristics

Color: Intense straw yellow with golden reflections; Fine and persistent perlage.   

Bouquet: Of bread crust and yellow fruit, with delicate floral and mineral notes.

Taste: Elegant, fine, full, with great character with a good acidity and perfect olfactory taste match.   

Food pairings: Ideal with raw fish and first courses based on seafood. It also goes well with more elaborate dishes based on fatty fish, seafood risottos and cod alla pertecaregna. Excellent in combination with elaborate dishes with white truffles.
