Vinification
Grapes are picked by hand, destemmed and undergo a cold maceration for a few hours. Alcoholic fermentation is followed by a maceration on the skins for one week and at least 16 months’ ageing in cement tanks. The wine is then aged for at least four months in the bottle before release.
Tasting note
Colour: Bright ruby red.
Aroma: Attractive with hints of cherry, dried plums, sweet spices and some aromatic vegetable notes.
Taste: Soft and pleasant palate with great concentration of fruit, excellent balance and a long finish.
Food pairing
Match with robust appetisers, sausage, pork roasts, vegetarian dishes with rich and tasty sauces, and spicy dishes. Best served at a temperature of 12-14°C.
