THE CELLAR

The treasures of the estate are kept in the cellar. Here, the grapes are received, fermented in steel tanks, refined in cement tanks and bottled. The cellar is equipped with a state-of-the-art laboratory to ensure quality control and traceability.

OENOLOGY

The word oenology comes from the Greek “oinos” (wine) and “logos” (study).

DEFINITION: Oenology is the science that studies the transformation of grapes into wine, the grapes suitable for wine production, the production process and related techniques such as filtration, pressing and pumping over.

In practice

Our secret is in the vineyard! We are primarily winegrowers.

 We cultivate the vines with the utmost respect for the natural balance of the terroir. We collect the fruits that nature offers us thanks to this patient work in the vineyard.

Through September, October and November, we taste the grapes meticulously to observe the maturation of the skins, the pulp and the seeds..

This attention to detail allows us to establish the optimal harvest time, harvest being the crucial moment in determining the quality of our wines.

The harvest period varies according to the style of wine we want to create – grapes destined for sparkling wine, ready-to-drink wine, wine for ageing and passito wine must each picked at the best possible moment for that style. Picking at the right time, when the grapes have attained perfect balance and are displaying the aromatic intensity typical of their varietal, we know that the wine will naturally achieve balance and will not need any chemical intervention during winemaking.


 

The DOC and DOCG of IRPINIA

Thanks to the characteristics of its terroir, such as climate and soil, Irpinia has long been known as a land of viticulture. Irpinia is the proud home of southern Italy’s first DOCG, Taurasi DOCG, elevated in 1993. This promotion was followed by those of two historically significant Irpinian white wines, Fiano di Avellino DOCG and Greco di Tufo DOCG. In addition to boasting three of southern Italy’s most prestigious DOCGs, Irpinia has many notable DOCs, including Coda di Volpe DOC and Falanghina DOC.
