Around the winery extends the locality Santa Vara, on this site grows the Falanghina grapes that give life to this wine with unique characteristics. This selection is the expression of the vinification of pure Falanghina grapes grown in a particularly suitable site, so it possesses peculiar and irreproducible characteristics.

Grape variety: 100 % Falanghina.
Production area: Vineyard located in Santa Vara, extends in a single body in front of the winery in the municipality of Luogosano and Sant’Angelo all’Esca in the production area of the Irpinia Falanghina DOC Appellation. Altitude: 430 m asl.
Type of soil: Clayey-sandy soil, deep, with good organic endowment and volcanic elements.
Vinification: The grapes harvested by hand, are immediately transported to the cellar, selected, and pressed whole. The clarification of the must takes place cold. The fermentation is carried out in large barrels, then the wine ages on its fine lees always in wood. This is followed by a phase of refinement in bottle.
Organoleptic characteristics
Color: Intense straw yellow color with golden reflections.
Bouquet: The nose is complex and aromatic, rich in notes of exotic fruit and citrus hints with sweet references of white pepper.
Taste: Fruity, elegant and enveloping taste with excellent freshness and very persistent.
Food pairings: Ideal with dishes of good structure, like pasta or risotto based on meat or fish, cheeses, delicately spicy dishes, particularly suitable with seafood dishes cooked in the oven. Perfect in combination with sea bass in salt crust. Serve at a temperature of 10-12°C.
