They are harvested when fully ripe, transported to the cellar where they are carefully selected before being destemmed. The fermentation takes place at a controlled temperature and the maceration “on the skins” lasts for about 20 days. After fermentation, it ages in French oak barrels for 12 months, in cement tanks for another 24 months and finally for at least 12 months in bottle.
